Delicious mini beef wellingtons perfect for appetizers.
Ingredients

- 1 lb beef tenderloin, trimmed
- 1 lb puff pastry
- 8 oz mushrooms, finely chopped
- 2 tbsp Dijon mustard
- 1 egg, beaten
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Sear the beef tenderloin in a hot pan for 2-3 minutes on each side.
- Remove the beef and let it cool.
- In the same pan, sauté the mushrooms until moisture evaporates.
- Spread Dijon mustard on the cooled beef.
- Roll out the puff pastry and cut into squares.
- Place a spoonful of mushrooms on each pastry square.
- Add a piece of beef on top of the mushrooms.
- Fold pastry over the beef and seal edges.
- Brush with beaten egg.
- Bake for 20-25 minutes until golden brown.
Notes
- Serve warm for best flavor.
- Can be made ahead and frozen before baking.
- Experiment with different mushrooms for varied taste.
