Description
Bessara is a traditional Moroccan soup made from fava beans. It is hearty and nutritious, perfect for a warm meal.
Ingredients

- 1 cup dried fava beans
- 4 cups water
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Olive oil for drizzling
Instructions
- Soak the fava beans overnight in water.
- Drain and rinse the beans.
- In a pot, combine the beans, chopped onion, garlic, and water.
- Bring to a boil, then reduce heat and simmer until the beans are soft.
- Add cumin, paprika, and salt.
- Blend the mixture until smooth.
- Serve hot, drizzled with olive oil.
Notes
- For a thicker soup, reduce the amount of water.
- Garnish with fresh herbs if desired.
- Can be served with bread on the side.
