Ingredients

- 1 cup sparkling water or sparkling apple juice
- 2 tbsp freshly squeezed lemon or lime juice
- 5–6 fresh mint or basil leaves
- 1 tbsp honey or lavender syrup
- 1 tbsp elderflower syrup or fresh fruit juice
- 1/4 cup fresh strawberries or rhubarb (optional)
- Ice cubes
Instructions
- Add fresh fruit and mint or basil leaves into a glass.
- Gently muddle to release flavors.
- Pour in freshly squeezed lemon or lime juice.
- Add honey or lavender syrup.
- Fill the glass with ice.
- Top with sparkling water or sparkling apple juice.
- Stir gently and garnish with a cucumber slice or rosemary sprig if desired.
Notes
- Do not over-muddle herbs to avoid bitterness.
- Use large ice cubes to prevent dilution.
- Fresh citrus juice gives the best flavor.
- Can be prepared in a pitcher for gatherings.
- Homemade syrup lasts up to 1 week in the refrigerator.
