Description

Ingredients

  • 1 cup bulgur
  • 2 cups vegetable broth
  • 1 medium onion, chopped
  • 2 tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • Fresh parsley for garnish

Instructions

  1. Rinse bulgur under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Sauté onion until translucent.
  4. Add diced tomatoes and cook for 5 minutes.
  5. Stir in bulgur, salt, pepper, and cumin.
  6. Pour in vegetable broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 15 minutes.
  8. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff with a fork and garnish with parsley.
