Description

These ultimate chewy chocolate chip cookies feature golden, crisp edges and soft, gooey centers loaded with melty chocolate chips. Made with melted butter, cornstarch, and an extra egg yolk for bakery-quality chewiness and rich buttery flavor.

  • 1 cup (227g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs plus 1 egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups (281g) all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (255g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, cornstarch, baking soda, and salt. Set aside.
  3. In a large bowl, beat melted butter with brown and granulated sugars until combined.
  4. Beat in eggs one at a time, then add vanilla extract and mix until smooth.
  5. Gradually add dry ingredients to wet mixture, mixing gently until just combined.
  6. Fold in chocolate chips evenly throughout the dough.
  7. Cover and refrigerate dough for at least 24 hours (up to 72 hours) to enhance flavor and texture.
  8. Using a cookie scoop or spoon, form tall, textured dough balls.
  9. Place dough balls 2 inches apart on prepared baking sheets.
  10. Bake for 10–12 minutes, until edges are golden but centers still look soft.
  11. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
