- 4 chicken breasts
- 100g unsalted butter, softened
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon lemon juice
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the softened butter, garlic, parsley, lemon juice, salt, and pepper.
- Take each chicken breast and carefully cut a pocket in the thickest part.
- Stuff each pocket with the garlic parsley butter.
- Seal the openings with toothpicks or kitchen twine.
- Coat each chicken breast in flour, then dip in beaten eggs, and finally coat in breadcrumbs.
- Heat oil in a frying pan over medium heat.
- Fry each chicken breast until golden brown on both sides.
- Transfer the chicken to a baking dish and bake for 15-20 minutes until fully cooked.
- Remove the toothpicks or twine before serving.
Notes
- Serve with mashed potatoes or a fresh salad.
- Make sure the butter is very cold for easier stuffing.
- Adjust garlic to taste based on your preference.
