Description

Delicious chicken quesadillas with a spicy kick from pepper jack cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup pepper jack cheese, shredded
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and bell peppers, sauté until soft.
  3. Stir in shredded chicken, cumin, garlic powder, salt, and pepper.
  4. Place a tortilla in the pan, add chicken mixture and sprinkle with cheese.
  5. Top with another tortilla and cook until golden brown.
  6. Flip and cook the other side until cheese melts.
  7. Remove from heat, slice and serve.

Notes

  • Serve with salsa or sour cream.
  • Adjust spice level by adding jalapeños if desired.
