Description
Delicious chicken quesadillas with a spicy kick from pepper jack cheese.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup pepper jack cheese, shredded
- 1/2 cup bell peppers, diced
- 1/2 cup onion, diced
- 4 large flour tortillas
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, sauté until soft.
- Stir in shredded chicken, cumin, garlic powder, salt, and pepper.
- Place a tortilla in the pan, add chicken mixture and sprinkle with cheese.
- Top with another tortilla and cook until golden brown.
- Flip and cook the other side until cheese melts.
- Remove from heat, slice and serve.
Notes
- Serve with salsa or sour cream.
- Adjust spice level by adding jalapeños if desired.
