Description
A hearty chickpea and sweet potato curry that’s full of flavor.
Ingredients

- 1 can chickpeas, drained and rinsed
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk
- 2 cups vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a pot, sauté onion, garlic, and ginger until soft.
- Add diced sweet potatoes and cook for 5 minutes.
- Stir in curry powder and turmeric.
- Add chickpeas, coconut milk, and vegetable broth.
- Bring to a boil, then simmer for 20 minutes or until sweet potatoes are tender.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.
