Description

A hearty chickpea and sweet potato curry that’s full of flavor.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, sauté onion, garlic, and ginger until soft.
  2. Add diced sweet potatoes and cook for 5 minutes.
  3. Stir in curry powder and turmeric.
  4. Add chickpeas, coconut milk, and vegetable broth.
  5. Bring to a boil, then simmer for 20 minutes or until sweet potatoes are tender.
  6. Season with salt to taste.
  7. Garnish with fresh cilantro before serving.
