Rich and creamy baked chocolate cheesecake with a chocolate crust.

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup cocoa powder
- 1/2 cup semi-sweet chocolate chips, melted
Instructions
- Preheat your oven to 325°F (160°C).
- Combine chocolate cookie crumbs and melted butter in a bowl. Press mixture into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth.
- Add sugar and vanilla extract. Mix until well combined.
- Beat in eggs one at a time, mixing well after each addition.
- Add sour cream, cocoa powder, and melted chocolate. Mix until smooth.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour.
- Refrigerate for at least 4 hours before serving.
Notes
- Use room temperature ingredients for better mixing.
- Chill the cheesecake overnight for best flavor.
- Top with whipped cream or chocolate shavings if desired.
