- 1 pre-baked pie crust
- 1 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/8 teaspoon salt
- 2 3/4 cups milk
- 4 large egg yolks, beaten
- 4 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar (for meringue)
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, mix sugar, cocoa powder, cornstarch, and salt.
- Gradually whisk in milk and cook over medium heat until thickened.
- Remove from heat and stir in egg yolks, butter, and vanilla.
- Pour the chocolate mixture into the pie crust.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add sugar and beat until stiff peaks form.
- Spread meringue over the chocolate filling.
- Bake for 10-15 minutes until meringue is lightly browned.
- Cool before serving.
Notes
- Store leftovers in the refrigerator.
- Ensure the pie crust is completely cool before adding filling.
- Use room temperature egg whites for better meringue.
