Ingredients

  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/8 teaspoon salt
  • 2 3/4 cups milk
  • 4 large egg yolks, beaten
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar (for meringue)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, mix sugar, cocoa powder, cornstarch, and salt.
  3. Gradually whisk in milk and cook over medium heat until thickened.
  4. Remove from heat and stir in egg yolks, butter, and vanilla.
  5. Pour the chocolate mixture into the pie crust.
  6. In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
  7. Gradually add sugar and beat until stiff peaks form.
  8. Spread meringue over the chocolate filling.
  9. Bake for 10-15 minutes until meringue is lightly browned.
  10. Cool before serving.
