Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (8-ounce) package cream cheese, softened
- 1 cup creamy peanut butter
- 1 ½ cups powdered sugar
- 1 teaspoon vanilla extract
- ½ cup cold heavy cream (for filling)
- ½ cup heavy cream (for ganache)
- 4 ounces good quality semi-sweet chocolate, finely chopped
- Chopped roasted peanuts (optional garnish)
- Mini chocolate chips (optional garnish)
- Extra whipped cream (optional garnish)
Instructions
- Prepare the Graham Cracker Crust: Combine graham cracker crumbs, granulated sugar, and melted butter. Press firmly into a 9-inch pie plate. Chill for at least 15 minutes.
- Make the Creamy Peanut Butter Filling: Beat softened cream cheese until fluffy. Add peanut butter and beat until smooth. Gradually add powdered sugar, then vanilla extract. In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold whipped cream into the peanut butter mixture.
- Assemble the Pie: Pour the peanut butter filling into the chilled crust and spread evenly. Return to the refrigerator to chill for at least 2 hours.
- Prepare the Decadent Chocolate Ganache Topping: Heat ½ cup heavy cream until simmering. Pour over finely chopped semi-sweet chocolate. Let sit for 5 minutes, then whisk until smooth and glossy. Let cool for 10-15 minutes until slightly thickened.
- Chill and Serve Your Masterpiece: Pour cooled ganache over the chilled pie, spreading evenly. Return to the refrigerator for another 2-4 hours (or overnight) until the ganache is set. Garnish as desired, slice, and serve.
Notes
- Ensure cream cheese is fully softened for a smooth filling.
- Do not overmix the whipped cream into the peanut butter filling to maintain an airy texture.
- Allow ganache to cool slightly before pouring to prevent it from melting the peanut butter layer.
- Chilling times are crucial for a perfectly set pie.
- For clean slices, use a sharp knife warmed under hot water between cuts.
