Description
Chorba Frik is a traditional Algerian soup made with freekeh and vegetables.
Ingredients

- 1 cup freekeh
- 1 onion, chopped
- 2 carrots, diced
- 2 tomatoes, chopped
- 1 bell pepper, diced
- 1/2 cup chickpeas, cooked
- 1/4 cup parsley, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 6 cups vegetable broth
Instructions
- Rinse the freekeh under cold water.
- In a pot, sauté the onion until translucent.
- Add carrots, bell pepper, and tomatoes. Cook for 5 minutes.
- Add cooked chickpeas, freekeh, and spices. Stir well.
- Pour in the vegetable broth. Bring to a boil.
- Reduce heat and let it simmer for 30 minutes.
- Add parsley and adjust seasoning. Cook for another 5 minutes.
- Serve hot.
Notes
- Freekeh can be found in most grocery stores.
- Adjust spices according to your taste.
- Add more vegetables if desired.
