Ingredients

- 4 flour tortillas
- 1 cup shredded cheese
- 1 cup cooked chicken, diced
- 1/2 cup bell peppers, diced
- 1/2 cup onions, diced
- 1/4 cup cilantro, chopped
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Sauté onions and bell peppers until soft.
- Add cooked chicken and cilantro, stir to combine.
- Place one tortilla in the pan, sprinkle half the cheese on top.
- Add the chicken mixture and cover with the remaining cheese.
- Top with another tortilla and cook until golden brown.
- Flip and cook the other side until cheese is melted.
- Remove from heat, cut into wedges, and serve.
Notes
- Use any leftover chicken for convenience.
- Add your choice of spices for extra flavor.
- Serve with salsa or guacamole.
