- 1 cup jasmine rice
- 14 oz coconut milk
- 1 cup chicken broth
- 1 tbsp oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 tsp salt
Instructions
- Heat oil in your pan.
- Add onion and garlic.
- Cook until soft.
- Add your chicken.
- Brown the meat.
- Stir in your rice.
- Add coconut milk and broth.
- Add salt.
- Boil the liquid.
- Cover the pan.
- Lower your heat.
- Simmer for 20 minutes.
- Let it rest for 5 minutes.
Notes
- Rinse your rice before you cook.
- Use full-fat coconut milk.
- Add lime juice for flavor.
