A flavorful and creamy coconut lime shrimp curry.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 can (13.5 oz) coconut milk
- 2 tbsp lime juice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 bell pepper, sliced
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat.
- Add onion, garlic, and ginger. Sauté until fragrant.
- Stir in red curry paste and cook for 1 minute.
- Add coconut milk, lime juice, fish sauce, and brown sugar. Mix well.
- Add shrimp and bell pepper. Cook until shrimp is pink.
- Garnish with cilantro before serving.
Notes
- Serve with rice or noodles.
- Adjust spice level by adding more or less curry paste.
