This recipe makes a light bread with cottage cheese and berries. You get a high protein snack that tastes sweet.

- 3 large egg whites
- 0.5 cup low fat cottage cheese
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 0.25 cup fresh blueberries
Instructions
- Preheat your oven to 300 degrees Fahrenheit.
- Line a baking sheet with parchment paper.
- Place the egg whites in a clean bowl.
- Whisk the egg whites until stiff peaks form.
- Blend the cottage cheese and honey in a separate bowl until smooth.
- Gently fold the cottage cheese mixture into the egg whites.
- Sift the cornstarch over the mixture and fold it in.
- Scoop the batter onto the baking sheet in two large rounds.
- Press the blueberries into the top of each round.
- Bake for 25 minutes until the bread turns golden brown.
- Let the bread cool before you remove it from the paper.
Notes
- Use room temperature egg whites for better volume.
- Check that your blending bowl is completely dry.
- Store leftovers in a sealed container in the fridge.
