Description

This recipe makes a light bread with cottage cheese and berries. You get a high protein snack that tastes sweet.


Ingredients

  • 3 large egg whites
  • 0.5 cup low fat cottage cheese
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 0.25 cup fresh blueberries

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit.
  2. Line a baking sheet with parchment paper.
  3. Place the egg whites in a clean bowl.
  4. Whisk the egg whites until stiff peaks form.
  5. Blend the cottage cheese and honey in a separate bowl until smooth.
  6. Gently fold the cottage cheese mixture into the egg whites.
  7. Sift the cornstarch over the mixture and fold it in.
  8. Scoop the batter onto the baking sheet in two large rounds.
  9. Press the blueberries into the top of each round.
  10. Bake for 25 minutes until the bread turns golden brown.
  11. Let the bread cool before you remove it from the paper.

Notes

  • Use room temperature egg whites for better volume.
  • Check that your blending bowl is completely dry.
  • Store leftovers in a sealed container in the fridge.
