- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt and pepper, then add to the skillet.
- Cook until golden brown, about 6-7 minutes on each side. Remove chicken and set aside.
- Add garlic to the skillet and sauté for 1 minute.
- Pour in chicken broth and scrape the bottom of the skillet to release any bits.
- Add heavy cream, sun-dried tomatoes, and Italian seasoning. Stir to combine.
- Add spinach and cook until wilted.
- Return chicken to the skillet and simmer for 5-7 minutes until cooked through.
- Serve with grated Parmesan cheese on top.

- For extra flavor, marinate chicken in Italian dressing before cooking.
