Description

Ingredients

  • 2 cups shredded cooked chicken
  • 2 cups Monterey Jack cheese
  • 10 flour tortillas
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 can diced green chiles

Instructions

  1. Preheat your oven to 350 degrees.
  2. Grease a baking dish.
  3. Mix chicken and one cup of cheese in a bowl.
  4. Fill tortillas with the mixture and roll them.
  5. Place rolls in the dish.
  6. Melt butter in a pan.
  7. Stir in flour and whisk for one minute.
  8. Pour in chicken broth and whisk until thick.
  9. Remove from heat and stir in sour cream and chiles.
  10. Pour sauce over enchiladas.
  11. Sprinkle cheese on top.
  12. Bake for 22 minutes.

Notes

  • Use rotisserie chicken to save time.
  • Do not boil the sauce after adding sour cream.
  • Add jalapenos for extra heat.
