Description

Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups milk
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup sugar (for brûlée)
  • 2 egg yolks
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. In a bowl, whisk flour, eggs, milk, sugar, and vanilla until smooth.
  2. Heat a non-stick skillet over medium heat and add a small amount of butter.
  3. Pour 1/4 cup of batter into the skillet, swirling to coat.
  4. Cook for 1-2 minutes until edges lift, then flip and cook for another minute.
  5. Repeat until all batter is used, stacking crepes on a plate.
  6. In a separate bowl, whisk egg yolks and sugar until pale.
  7. Heat heavy cream in a saucepan until just simmering, then slowly whisk into yolk mixture.
  8. Add vanilla extract and combine well.
  9. Fill each crepe with crème brûlée filling and fold.
  10. Sprinkle sugar on top of each crepe and torch until caramelized.

Notes

  • Use a kitchen torch for the best caramelization.
  • Keep crepes warm in the oven while preparing the filling.
