Delicious crepes filled with rich crème brûlée filling.
Ingredients

- 1 cup all-purpose flour
- 2 large eggs
- 2 cups milk
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1/2 cup sugar (for brûlée)
- 2 egg yolks
- 1 teaspoon vanilla extract (for filling)
Instructions
- In a bowl, whisk flour, eggs, milk, sugar, and vanilla until smooth.
- Heat a non-stick skillet over medium heat and add a small amount of butter.
- Pour 1/4 cup of batter into the skillet, swirling to coat.
- Cook for 1-2 minutes until edges lift, then flip and cook for another minute.
- Repeat until all batter is used, stacking crepes on a plate.
- In a separate bowl, whisk egg yolks and sugar until pale.
- Heat heavy cream in a saucepan until just simmering, then slowly whisk into yolk mixture.
- Add vanilla extract and combine well.
- Fill each crepe with crème brûlée filling and fold.
- Sprinkle sugar on top of each crepe and torch until caramelized.
Notes
- Use a kitchen torch for the best caramelization.
- Keep crepes warm in the oven while preparing the filling.
