Crispy Fish Tacos with Mango Slaw

- 1 lb white fish fillets
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 eggs
- 1 cup buttermilk
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 8 small corn tortillas
- 1 cup shredded cabbage
- 1 cup diced mango
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- Preheat your oven to 400°F (200°C).
- Season fish with paprika, garlic powder, salt, and pepper.
- Dip fish in buttermilk, then coat in a mixture of cornmeal and flour.
- Place fish on a baking sheet and bake for 15-20 minutes until crispy.
- In a bowl, mix cabbage, mango, cilantro, and lime juice for slaw.
- Warm tortillas in a skillet for 30 seconds on each side.
- Assemble tacos with fish and mango slaw.
Notes
- Use any white fish like cod or tilapia.
- Adjust lime juice to taste.
- Serve with hot sauce if desired.
