Description

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 lb sushi-grade tuna, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 2 green onions, chopped
  • Oil for frying

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Once cooked, transfer rice to a bowl and mix in the vinegar mixture. Let it cool.
  5. Form rice into small squares or rectangles.
  6. Heat oil in a pan and fry the rice pieces until crispy on both sides.
  7. In another bowl, combine tuna, mayonnaise, sriracha, and green onions.
  8. Top each crispy rice piece with a spoonful of the spicy tuna mixture.
