Description

Ingredients

  • 500g fish fillets
  • 1 can coconut milk (400ml)
  • 2 tablespoons curry paste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan over medium heat.
  2. Sauté onions until translucent.
  3. Add garlic and ginger; cook for 1 minute.
  4. Stir in curry paste and cook for another minute.
  5. Add coconut milk and bring to a simmer.
  6. Add fish fillets and cook for 10-15 minutes.
  7. Season with salt and pepper.
