Ingredients

- 1 lb chicken, cut into pieces
- 2 cups coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp curry powder
- 1 tsp cumin
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 cup diced tomatoes
- 1 red bell pepper, chopped
- 2 cups spinach
- Salt to taste
- 2 tbsp oil
Instructions
- Heat oil in a pot over medium heat.
- Add onion, garlic, and ginger. Cook until softened.
- Add chicken and cook until browned.
- Stir in curry powder, cumin, cinnamon, and nutmeg.
- Add coconut milk and diced tomatoes. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add bell pepper and spinach. Cook until spinach wilts.
- Season with salt and serve hot.
Notes
- Serve with rice or naan.
- Adjust spices to taste.
- Can use tofu or vegetables for a vegetarian option.
