Description

A unique blend of flavors combining Christmas spices with traditional curry.


Ingredients

  • 1 lb chicken, cut into pieces
  • 2 cups coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup diced tomatoes
  • 1 red bell pepper, chopped
  • 2 cups spinach
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pot over medium heat.
  2. Add onion, garlic, and ginger. Cook until softened.
  3. Add chicken and cook until browned.
  4. Stir in curry powder, cumin, cinnamon, and nutmeg.
  5. Add coconut milk and diced tomatoes. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Add bell pepper and spinach. Cook until spinach wilts.
  8. Season with salt and serve hot.

Notes

  • Serve with rice or naan.
