Ingredients

Scale
  • 2 pounds of small potatoes
  • 4 cups clarified tallow
  • Salt to taste

Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Wash the potatoes thoroughly and leave them whole.
  3. In a large oven-safe pot, add the clarified tallow.
  4. Place the potatoes in the pot and season with salt.
  5. Cover the pot and place it in the oven.
  6. Cook for 2 to 3 hours until the potatoes are tender.
  7. Remove from the oven and let them cool slightly before serving.

Notes

  • Use small, uniform potatoes for even cooking.
  • Clarified tallow can be made by melting regular tallow and removing the solids.
