Ingredients

- 1 cup chopped romaine lettuce
- 1 cup chopped kale
- 1 cup chopped spinach
- 1 avocado, diced
- 1/2 cup green onions, chopped
- 1/2 cup cucumber, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Chop all greens and vegetables.
- In a bowl, combine olive oil, lemon juice, apple cider vinegar, Dijon mustard, salt, and pepper.
- Mix the dressing until well combined.
- Add greens and vegetables to a large bowl.
- Pour the dressing over the salad and toss well.
- Serve immediately or chill before serving.
