Ingredients

- 2 lbs beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- 1 tablespoon tomato paste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef and sear until browned on all sides.
- Remove beef and set aside.
- Add onion and garlic, sauté until softened.
- Stir in tomato paste, thyme, salt, and pepper.
- Add beef back to the pot along with carrots, potatoes, and bay leaves.
- Pour in beef broth and bring to a boil.
- Reduce heat, cover, and let simmer for 1.5 to 2 hours or until beef is tender.
Notes
- Serve with bread for a complete meal.
- Adjust seasoning to taste.
- Store leftovers in the refrigerator for up to 3 days.
