Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 1 tablespoon tomato paste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef and sear until browned on all sides.
  3. Remove beef and set aside.
  4. Add onion and garlic, sauté until softened.
  5. Stir in tomato paste, thyme, salt, and pepper.
  6. Add beef back to the pot along with carrots, potatoes, and bay leaves.
  7. Pour in beef broth and bring to a boil.
  8. Reduce heat, cover, and let simmer for 1.5 to 2 hours or until beef is tender.
