Ingredients

  • 2 cups basmati rice
  • 500 grams halal chicken, cut into pieces
  • 1 large onion, sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 green chilies, slit
  • 1/2 cup yogurt
  • 1/4 cup cooking oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh cilantro and mint leaves for garnish
  • 4 cups water

Instructions

  1. Rinse the basmati rice until the water runs clear and soak for 30 minutes.
  2. Heat oil in a large pot and add cumin seeds. Sauté until fragrant.
  3. Add sliced onions and cook until golden brown.
  4. Stir in minced garlic, ginger, and green chilies. Cook for a few minutes.
  5. Add chicken pieces and cook until browned.
  6. Mix in chopped tomatoes, yogurt, and spices. Cook until chicken is tender.
  7. Add soaked rice and water. Stir gently and bring to a boil.
  8. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  9. Remove from heat and let it sit for 10 minutes before serving.
  10. Garnish with cilantro and mint leaves before serving.

Notes

  • Adjust spices according to your taste.
  • Serve with raita or salad.
  • For extra flavor, add saffron soaked in warm milk.
