Description

Ingredients

  • 2 chicken breasts, flattened
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cups chicken broth
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper.
  2. Dredge the chicken in flour, dip in eggs, and coat with panko breadcrumbs.
  3. Heat oil in a pan and cook chicken until golden brown on both sides. Remove and set aside.
  4. In the same pan, sauté onion and carrots until soft.
