- 2 chicken breasts, flattened
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 carrots, diced
- 2 cups chicken broth
- 2 tablespoons curry powder
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
- Season the chicken with salt and pepper.
- Dredge the chicken in flour, dip in eggs, and coat with panko breadcrumbs.
- Heat oil in a pan and cook chicken until golden brown on both sides. Remove and set aside.
- In the same pan, sauté onion and carrots until soft.
- Add chicken broth, curry powder, and soy sauce. Simmer for 10 minutes.
- Slice the chicken and serve it over rice with curry sauce on top.
