A delicious and nutritious high protein rice dish that meets halal dietary requirements.
Ingredients

- 2 cups basmati rice
- 1 lb chicken breast, diced
- 1 can chickpeas, drained
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a pot, cook the rice according to package instructions. Set aside.
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add diced chicken to the skillet, season with cumin, paprika, salt, and pepper. Cook until browned.
- Stir in chickpeas and cook for another 5 minutes.
- Combine the chicken mixture with the cooked rice and mix well.
- Garnish with fresh parsley before serving.
Notes
- This dish can be served with a side of salad.
- You can substitute chicken with beef or tofu for variation.
