- 1 pound chicken breast
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon ginger
- 2 garlic cloves
- 1/2 cup coconut milk
- 1 tablespoon vegetable oil
- 1/4 cup peanuts
- 1/4 cup cilantro
Instructions
- Heat oil in a pan over medium heat.
- Add chicken and cook until brown.
- Mix peanut butter, soy sauce, honey, lime juice, ginger, garlic, and coconut milk in a bowl.
- Pour the sauce over the chicken.
- Simmer for 5 minutes until the sauce thickens.
- Garnish with peanuts and cilantro before you serve.
Notes
- You can use tamari for a gluten free meal.
- Add red pepper flakes if you want heat.
- Serve your chicken with rice.
