Description
Lamb Over Rice is a popular street food dish served at Halal carts. It features tender lamb served over a bed of fragrant rice, often accompanied by salad and sauces.
Ingredients

- 1 lb lamb shoulder, cut into pieces
- 2 cups basmati rice
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tsp cumin
- 2 tsp coriander
- 1 tsp paprika
- Salt and pepper to taste
- 4 cups water or broth
- 1 cup lettuce, shredded
- 1 tomato, diced
- 1/2 cup yogurt sauce
- Hot sauce, to taste
Instructions
- In a pot, heat oil and sauté the onion and garlic until soft.
- Add lamb, cumin, coriander, paprika, salt, and pepper. Cook until browned.
- Pour in water or broth, cover, and simmer for about 1 hour.
- In another pot, cook rice according to package instructions.
- Once lamb is tender, shred it with a fork.
- To serve, place rice on a plate, top with lamb, and add salad and sauces.
Notes
- Adjust spices to your taste.
- For a richer flavor, marinate the lamb overnight.
- Serve with pita bread if desired.
