Description

Lamb Over Rice is a popular street food dish served at Halal carts. It features tender lamb served over a bed of fragrant rice, often accompanied by salad and sauces.


Ingredients

  • 1 lb lamb shoulder, cut into pieces
  • 2 cups basmati rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • 4 cups water or broth
  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • 1/2 cup yogurt sauce
  • Hot sauce, to taste

Instructions

  1. In a pot, heat oil and sauté the onion and garlic until soft.
  2. Add lamb, cumin, coriander, paprika, salt, and pepper. Cook until browned.
  3. Pour in water or broth, cover, and simmer for about 1 hour.
  4. In another pot, cook rice according to package instructions.
  5. Once lamb is tender, shred it with a fork.
  6. To serve, place rice on a plate, top with lamb, and add salad and sauces.

  • Adjust spices to your taste.
  • For a richer flavor, marinate the lamb overnight.
  • Serve with pita bread if desired.
