Instructions
- Boil the diced potatoes until tender, about 10-15 minutes.
- Drain the potatoes and let them cool slightly.
- In a large skillet, heat olive oil over medium heat.

- Add potatoes to the skillet and season with chili powder, cumin, salt, and pepper.
- Cook until potatoes are crispy and golden, about 10 minutes.
- Stir in chopped cilantro before serving.
