Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 cup ice water
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon lemon zest
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix flour, sugar, and salt.
- Add cold butter and mix until crumbly.
- Stir in ice water until dough forms. Chill for 30 minutes.
- In another bowl, combine blueberries, lemon juice, lemon zest, and cornstarch.
- Roll out the dough on parchment paper into a circle.
- Place blueberry mixture in the center, leaving a border.
- Fold the edges of the dough over the filling.
- Brush dough with beaten egg.
- Bake for 30-35 minutes until golden brown.
Notes
- Use fresh blueberries for best flavor.
- Chill the dough to prevent it from shrinking.
- Serve warm or at room temperature.
