Ingredients

  • 1 tablespoon cornstarch
  • 1 tablespoon lemon zest
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix flour, sugar, and salt.
  3. Add cold butter and mix until crumbly.
  4. Stir in ice water until dough forms. Chill for 30 minutes.
  5. In another bowl, combine blueberries, lemon juice, lemon zest, and cornstarch.
  6. Roll out the dough on parchment paper into a circle.
  7. Place blueberry mixture in the center, leaving a border.
  8. Fold the edges of the dough over the filling.
  9. Brush dough with beaten egg.
  10. Bake for 30-35 minutes until golden brown.
