Description

A nutritious and hearty dish made with lentils and spinach served over turmeric rice.


Ingredients

  • 1 cup lentils
  • 2 cups spinach, chopped
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin
  • 2 tablespoons vegetable oil
  • 4 cups water
  • 1 cup rice
  • 2 cups water for rice
  • Salt to taste

Instructions

  1. Rinse the lentils under cold water.
  2. In a pot, heat oil and sauté onions until translucent.
  3. Add garlic, ginger, turmeric, and cumin; cook for 1 minute.
  4. Add tomatoes and cook until soft.
  5. Add lentils and 4 cups of water; bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  7. Stir in chopped spinach and cook for 5 minutes.
  8. In a separate pot, cook rice with 2 cups of water and a pinch of salt.
  9. Serve lentil dal over turmeric rice.

Notes

  • Adjust spices according to your taste.
  • You can add other vegetables if desired.
  • Serve with yogurt for added flavor.
