Description
A nutritious and hearty dish made with lentils and spinach served over turmeric rice.
Ingredients

- 1 cup lentils
- 2 cups spinach, chopped
- 1 onion, diced
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon cumin
- 2 tablespoons vegetable oil
- 4 cups water
- 1 cup rice
- 2 cups water for rice
- Salt to taste
Instructions
- Rinse the lentils under cold water.
- In a pot, heat oil and sauté onions until translucent.
- Add garlic, ginger, turmeric, and cumin; cook for 1 minute.
- Add tomatoes and cook until soft.
- Add lentils and 4 cups of water; bring to a boil.
- Reduce heat and simmer for 20-25 minutes until lentils are tender.
- Stir in chopped spinach and cook for 5 minutes.
- In a separate pot, cook rice with 2 cups of water and a pinch of salt.
- Serve lentil dal over turmeric rice.
Notes
- Adjust spices according to your taste.
- You can add other vegetables if desired.
- Serve with yogurt for added flavor.
