Description
Mansaf is a traditional Jordanian dish made with lamb, yogurt, and rice.
Ingredients

- 2 pounds lamb, cut into pieces
- 2 cups plain yogurt
- 1 cup rice
- 1 onion, chopped
- 4 cups water
- 2 tablespoons ghee or butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Pine nuts for garnish
- Fresh parsley for garnish
Instructions
- Heat ghee in a pot over medium heat.
- Add onions and sauté until golden.
- Add lamb pieces and brown on all sides.
- Pour in water and bring to a boil.
- Add salt, pepper, cumin, and coriander.
- Reduce heat and simmer for 1.5 hours until lamb is tender.
- In a separate pot, cook rice according to package instructions.
- Once lamb is cooked, remove from heat and stir in yogurt.
- Serve lamb over rice, garnished with pine nuts and parsley.
Notes
- Adjust spices to taste.
- Use bone-in lamb for more flavor.
- Soak rice for 30 minutes before cooking for better texture.
