Description

Mansaf is a traditional Jordanian dish made with lamb, yogurt, and rice.


Ingredients

Scale
  • 2 pounds lamb, cut into pieces
  • 2 cups plain yogurt
  • 1 cup rice
  • 1 onion, chopped
  • 4 cups water
  • 2 tablespoons ghee or butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Pine nuts for garnish
  • Fresh parsley for garnish

Instructions

  1. Heat ghee in a pot over medium heat.
  2. Add onions and sauté until golden.
  3. Add lamb pieces and brown on all sides.
  4. Pour in water and bring to a boil.
  5. Add salt, pepper, cumin, and coriander.
  6. Reduce heat and simmer for 1.5 hours until lamb is tender.
  7. In a separate pot, cook rice according to package instructions.
  8. Once lamb is cooked, remove from heat and stir in yogurt.
  9. Serve lamb over rice, garnished with pine nuts and parsley.

Notes

  • Adjust spices to taste.
  • Use bone-in lamb for more flavor.
  • Soak rice for 30 minutes before cooking for better texture.
