Description
Maqluba is a traditional Middle Eastern dish made with rice, eggplant, and lamb, cooked together and flipped upside down before serving.
Ingredients

- 2 cups basmati rice
- 1 lb lamb, cut into pieces
- 1 large eggplant, sliced
- 1 onion, chopped
- 4 cups water or broth
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon turmeric
- 2 tablespoons olive oil
- 1 cup chopped tomatoes
- 1/2 cup pine nuts (optional)
Instructions
- Soak the rice in water for 30 minutes, then drain.
- Heat olive oil in a large pot and sauté onions until golden.
- Add lamb and cook until browned.
- Layer the eggplant slices on top of the lamb.
- Add the chopped tomatoes, salt, pepper, and turmeric.
- Pour in the water or broth and bring to a boil.
- Add the drained rice on top and reduce heat to low.
- Cover and cook for 30-40 minutes, until rice is tender.
- Remove from heat and let sit for 10 minutes.
- Flip the pot onto a serving platter to serve upside down.
Notes
- Serve with yogurt or salad.
- Adjust spices to your taste.
- Use chicken instead of lamb if preferred.
