Refreshing matcha pistachio popsicles for a cool treat.
Ingredients

- 2 cups coconut milk
- 2 tablespoons matcha powder
- 1/2 cup pistachios, chopped
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- In a bowl, mix coconut milk, matcha powder, honey, and vanilla extract until smooth.
- Fold in chopped pistachios.
- Pour the mixture into popsicle molds.
- Insert sticks and freeze for at least 4 hours.
- To remove, run warm water over the outside of the molds.
Notes
- Adjust sweetness to taste.
- Use unsweetened coconut milk for a healthier option.
- For a vegan version, use maple syrup.
