Description

Medfouna is a traditional Berber stuffed bread filled with meat and spices.


Ingredients

Scale
  • 500g bread flour
  • 300ml warm water
  • 10g salt
  • 7g instant yeast
  • 250g minced lamb or beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • Fresh coriander, chopped

Instructions

  1. In a bowl, mix flour, salt, and yeast.
  2. Add warm water gradually and knead until smooth.
  3. Cover the dough and let it rise for 1 hour.
  4. In a pan, heat olive oil and sauté onion and garlic.
  5. Add minced meat and spices, cook until browned.
  6. Mix in fresh coriander.
  7. Divide the dough into two pieces.
  8. Roll out one piece and place the filling in the center.
  9. Cover with the second piece of dough and seal edges.
  10. Preheat the oven to 200°C (392°F).
  11. Bake for 30-35 minutes until golden brown.
  12. Let it cool slightly before serving.

  • Serve warm for best flavor.
  • Can be made with chicken or vegetables for a different option.
