Description
Medfouna is a traditional Berber stuffed bread filled with meat and spices.
Ingredients
Scale
- 500g bread flour
- 300ml warm water
- 10g salt
- 7g instant yeast
- 250g minced lamb or beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp black pepper
- 2 tbsp olive oil
- Fresh coriander, chopped
Instructions
- In a bowl, mix flour, salt, and yeast.
- Add warm water gradually and knead until smooth.
- Cover the dough and let it rise for 1 hour.
- In a pan, heat olive oil and sauté onion and garlic.
- Add minced meat and spices, cook until browned.
- Mix in fresh coriander.
- Divide the dough into two pieces.
- Roll out one piece and place the filling in the center.
- Cover with the second piece of dough and seal edges.
- Preheat the oven to 200°C (392°F).
- Bake for 30-35 minutes until golden brown.
- Let it cool slightly before serving.
Notes
- Serve warm for best flavor.
- Can be made with chicken or vegetables for a different option.
- Store leftovers in an airtight container.
