Ingredients

- 200g Halloumi cheese
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup olives, pitted and sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Heat a non-stick pan over medium heat.
- Slice the Halloumi into thick pieces.
- Fry the Halloumi for 2-3 minutes on each side until golden brown.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and olives.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Top the salad with the fried Halloumi.
- Serve immediately.
Notes
- You can add other vegetables as desired.
- For extra flavor, add herbs like parsley or mint.
- This dish is best served fresh.
