Ingredients

  • 200g Halloumi cheese
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat a non-stick pan over medium heat.
  2. Slice the Halloumi into thick pieces.
  3. Fry the Halloumi for 2-3 minutes on each side until golden brown.
  4. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and olives.
