Instructions
- Line a large baking sheet with parchment paper or wax paper.
- In a large mixing bowl, combine the crushed vanilla wafers, shredded coconut, and ½ cup of unsweetened cocoa powder. Stir thoroughly.
- In a separate, medium-sized bowl, melt the butter.
- To the melted butter, add the 1 ½ cups of powdered sugar, evaporated milk, and vanilla extract. Whisk until smooth.
- Pour the wet butter mixture into the large bowl with the dry ingredients. Mix everything together until a uniform, moist dough forms.
- Take small portions of the mixture, about 1 tablespoon each, and roll them between your palms to form smooth, bite-sized balls.
- Coat the rolled balls in extra powdered sugar, cocoa powder, chopped nuts, melted chocolate, or sprinkles, if desired. Place the coated balls onto your prepared baking sheet.
- Repeat until all mixture is used.
- Place the baking sheet in the refrigerator and chill for at least 1 hour, or until the balls are firm.
