Description
Omani Shuwa Lamb is a traditional slow-cooked dish, often served during festive occasions. This flavorful lamb is marinated and cooked to perfection, resulting in tender meat.
Ingredients

- 1 whole lamb (around 15–20 kg)
- 4 cups of yogurt
- 1 cup of olive oil
- 1 cup of lemon juice
- 8 cloves of garlic, minced
- 2 tablespoons of cumin
- 2 tablespoons of coriander
- 2 tablespoons of turmeric
- 1 tablespoon of black pepper
- Salt to taste
- Banana leaves for wrapping
Instructions
- Prepare the marinade by mixing yogurt, olive oil, lemon juice, garlic, cumin, coriander, turmeric, black pepper, and salt.
- Rub the marinade all over the lamb, ensuring it is well coated.
- Cover the lamb and refrigerate for at least 24 hours.
- Preheat the oven to 150°C (300°F).
- Wrap the marinated lamb in banana leaves.
- Place the wrapped lamb in a deep baking dish.
- Cover the dish tightly with aluminum foil.
- Cook in the oven for 6-8 hours until the meat is tender and falls off the bone.
- Remove from the oven and let it rest for 30 minutes before unwrapping.
- Serve the lamb with rice or flatbread.
