Description

Omani Shuwa Lamb is a traditional slow-cooked dish, often served during festive occasions. This flavorful lamb is marinated and cooked to perfection, resulting in tender meat.


Ingredients

  • 1 whole lamb (around 1520 kg)
  • 4 cups of yogurt
  • 1 cup of olive oil
  • 1 cup of lemon juice
  • 8 cloves of garlic, minced
  • 2 tablespoons of cumin
  • 2 tablespoons of coriander
  • 2 tablespoons of turmeric
  • 1 tablespoon of black pepper
  • Salt to taste
  • Banana leaves for wrapping

Instructions

  1. Prepare the marinade by mixing yogurt, olive oil, lemon juice, garlic, cumin, coriander, turmeric, black pepper, and salt.
  2. Rub the marinade all over the lamb, ensuring it is well coated.
  3. Cover the lamb and refrigerate for at least 24 hours.
  4. Preheat the oven to 150°C (300°F).
  5. Wrap the marinated lamb in banana leaves.
  6. Place the wrapped lamb in a deep baking dish.
  7. Cover the dish tightly with aluminum foil.
  8. Cook in the oven for 6-8 hours until the meat is tender and falls off the bone.
  9. Remove from the oven and let it rest for 30 minutes before unwrapping.
  10. Serve the lamb with rice or flatbread.
