Ingredients

  • 2 lbs oxtail
  • 1 onion, chopped

  • 1 bay leaf

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Brown the oxtail on all sides.
  3. Add onion, garlic, carrots, and celery. Cook until softened.
  4. Stir in the diced tomatoes, broth, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 2-3 hours until oxtail is tender.
  7. Remove bay leaf before serving.
