Ingredients

- 2 lbs oxtail
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups beef broth
- 2 tbsp vegetable oil
- 1 tsp thyme
- 1 bay leaf
- Salt to taste
- Pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Brown the oxtail on all sides.
- Add onion, garlic, carrots, and celery. Cook until softened.
- Stir in the diced tomatoes, broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 2-3 hours until oxtail is tender.
- Remove bay leaf before serving.
Notes
- Serve with rice or crusty bread.
- Adjust seasoning to your preference.
