Description

Ingredients

  • 2 cups cooked chicken shredded
  • 2 cups cooked white rice
  • 1 cup Greek yogurt
  • 1/2 cup cucumber shredded and squeezed dry
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon dill chopped
  • 1/2 cup feta cheese crumbled
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Mix yogurt cucumber garlic lemon juice and dill in a bowl.
  3. Combine chicken and rice in a bowl.
  4. Stir the yogurt mixture into the chicken and rice.
  5. Spread the mixture into a baking dish.
  6. Top with feta tomatoes and red onion.
  7. Bake for 20 minutes until the dish is hot.

Notes

  • Squeeze liquid from the cucumber to prevent a thin sauce.
  • Use rotisserie chicken to save time.
  • Serve with pita bread.
