This chicken bake uses Mediterranean flavors with yogurt and herbs.
Ingredients

- 2 cups cooked chicken shredded
- 2 cups cooked white rice
- 1 cup Greek yogurt
- 1/2 cup cucumber shredded and squeezed dry
- 2 cloves garlic minced
- 1 tablespoon lemon juice
- 1 tablespoon dill chopped
- 1/2 cup feta cheese crumbled
- 1/2 cup cherry tomatoes halved
- 1/4 cup red onion diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375 degrees Fahrenheit.
- Mix yogurt cucumber garlic lemon juice and dill in a bowl.
- Combine chicken and rice in a bowl.
- Stir the yogurt mixture into the chicken and rice.
- Spread the mixture into a baking dish.
- Top with feta tomatoes and red onion.
- Bake for 20 minutes until the dish is hot.
Notes
- Squeeze liquid from the cucumber to prevent a thin sauce.
- Use rotisserie chicken to save time.
- Serve with pita bread.
