- 1 avocado diced
- 0.5 cup feta cheese
- 0.25 cup red onion chopped
- 0.25 cup parsley chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Rinse the chickpeas.
- Dice the avocado.
- Chop the onion and parsley.
- Place all items in a bowl.
- Add the feta.
- Pour oil and juice over the mix.
- Season with salt and pepper.
- Toss the salad.
