- 8 cups beef stock
- 0.5 cup dry white wine
- 2 sprigs fresh thyme
- 1 bay leaf

- 1 baguette
- 2 cups Gruyere cheese
Instructions
- Slice onions into thin rings.
- Melt butter and oil in a large pot.
- Cook onions on medium heat for 45 minutes until brown.
- Stir in flour and cook for 1 minute.
- Add wine to the pot.
- Pour in beef stock and add thyme and bay leaf.
- Simmer for 30 minutes.
- Toast baguette slices.
- Ladle soup into bowls.
- Place bread on top and cover with cheese.
- Broil until cheese bubbles.
