These bowls combine grilled chicken and quinoa for a meal. You get protein and fiber in every serving.
Ingredients

- 1 pound chicken breast
- 1 cup quinoa
- 2 cups water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup cherry tomatoes
- 1 cucumber
- 2 tablespoons lemon juice
Instructions
- Rinse the quinoa under cold water.
- Boil water in a pot and add the quinoa.
- Reduce heat and simmer for 15 minutes.
- Season the chicken with salt and pepper.
- Grill the chicken for 6 minutes on each side.
- Slice the chicken into strips.
- Mix the quinoa with tomatoes and cucumber.
- Top the bowls with chicken and lemon juice.
Notes
- Use vegetable broth for flavor.
- Add avocado for fats.
- Store leftovers in the refrigerator for 3 days.
