Description

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 1/2 pound sushi-grade tuna, diced
  • 1/2 cup edamame, shelled
  • 1/4 cup green onions, chopped
  • 1 avocado, sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • Seaweed salad, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot and bring to a boil.
  3. Reduce heat and cover, cooking for 20 minutes.
  4. Remove from heat and let it sit for 10 minutes.
  5. In a bowl, mix mayonnaise, sriracha, and sesame oil to make spicy mayo.
  6. In a serving bowl, layer sushi rice, tuna, edamame, avocado, and green onions.
  7. Drizzle with soy sauce and spicy mayo.
  8. Garnish with seaweed salad and sesame seeds.
