Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 1/2 pound sushi-grade tuna, diced
- 1/2 cup edamame, shelled
- 1/4 cup green onions, chopped
- 1 avocado, sliced
- 2 tablespoons soy sauce
- 2 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon sesame oil
- Seaweed salad, for garnish
- Sesame seeds, for garnish
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot and bring to a boil.
- Reduce heat and cover, cooking for 20 minutes.
- Remove from heat and let it sit for 10 minutes.
- In a bowl, mix mayonnaise, sriracha, and sesame oil to make spicy mayo.
- In a serving bowl, layer sushi rice, tuna, edamame, avocado, and green onions.
- Drizzle with soy sauce and spicy mayo.
- Garnish with seaweed salad and sesame seeds.
