Ingredients

  • 1 whole chicken, cut into pieces
  • 1 cup cashews
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, diced
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken pieces and brown on all sides.
  3. Remove chicken and set aside.
  4. Add onion, garlic, and bell pepper; sauté until soft.
  5. Add tomatoes, chicken broth, soy sauce, salt, and pepper.
  6. Return chicken to the pot, cover, and simmer for 30 minutes.
  7. Add cashews and cook for an additional 10 minutes.
