Description
Haitian chicken dish with cashews.
Ingredients

- 1 whole chicken, cut into pieces
- 1 cup cashews
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken pieces and brown on all sides.
- Remove chicken and set aside.
- Add onion, garlic, and bell pepper; sauté until soft.
- Add tomatoes, chicken broth, soy sauce, salt, and pepper.
- Return chicken to the pot, cover, and simmer for 30 minutes.
- Add cashews and cook for an additional 10 minutes.
- Serve hot with rice or bread.
Notes
- Adjust seasoning to your taste.
- Use roasted cashews for added flavor.
- Serve with a side of vegetables for a complete meal.
