Description
Pozole Verde with Chicken is a traditional Mexican soup made with hominy, chicken, and green sauce.
Ingredients

- 2 cups hominy
- 1 lb chicken breasts
- 4 cups chicken broth
- 1 cup tomatillos, husked and rinsed
- 2 green chilies
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- Salt to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a pot, combine chicken, broth, and salt. Bring to a boil.
- Add hominy and cook until heated through.
- In a blender, combine tomatillos, green chilies, onion, and garlic. Blend until smooth.
- Pour the green sauce into the pot and stir.
- Add cumin and adjust seasoning.
- Simmer for 10 minutes.
- Serve hot, garnished with cilantro and lime wedges.
Notes
- This soup can be made ahead of time.
- Store leftovers in the fridge for up to 3 days.
- For a spicier version, add more chilies.
