Ingredients

  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 4 jalapenos seeded and minced
  • 4 slices cooked bacon crumbled
  • 20 mini egg roll wrappers
  • 1 egg beaten
  • 2 cups vegetable oil for frying

Instructions

  1. Mix the cream cheese, cheddar, jalapenos, and bacon in a small bowl.
  2. Place one tablespoon of the mixture in the center of an egg roll wrapper.
  3. Fold the bottom corner over the filling then tuck in the sides.
  4. Roll the wrapper tightly toward the top corner.
  5. Brush the edges with the beaten egg to seal the roll.
  6. Heat the oil in a large skillet to 350 degrees.
  7. Fry the egg rolls for three minutes or until they turn golden brown.
  8. Place the rolls on paper towels to remove excess oil.
